Oat Milk Matcha Latte in San Diego: Why It Works

Oat milk matcha latte at Phinology Coffee

Oat milk is the milk in every matcha latte at Phinology, and it is not an accident. Its natural creaminess and light sweetness round off matcha's grassy bite without hiding it. Here is why oat milk works so well, how it compares to other milks, and how to make an oat milk matcha latte at home.

Why Oat Milk and Matcha Work Together

Matcha is earthy, slightly bitter, and full of umami. A good milk adds body and sweetness while staying out of the way. Oat milk does this because its starches break down into mild natural sugars, giving a smooth, rounded sweetness. The result tastes clearly of matcha, only softer.

Oat milk also has a neutral, cereal-like flavor. Unlike almond or coconut milk, it adds no strong taste of its own, so the matcha stays the star.

Oat Milk vs Other Milks for Matcha

MilkTextureEffect on Matcha
Oat (barista)Creamy, steams and foams wellSoftens bitterness, keeps matcha flavor clear
Whole dairyRich, classic foamSweet and full, but can mute delicate notes
SoyCreamy, foams wellBean flavor can compete with matcha
AlmondThin, foams poorlyNutty taste, watery body
CoconutMedium bodyStrong coconut flavor takes over

Pick Barista-Style Oat Milk

Regular oat milk can taste thin and separate in a hot drink. Barista blends have added fat for a silkier texture and steadier foam.

How to Make an Oat Milk Matcha Latte

For one 8 to 10 oz drink:

  1. Sift 2 to 3g (about 1 teaspoon) of matcha into a bowl to remove clumps.
  2. Add 45ml (about 3 tablespoons) of water at around 175F (80C). Boiling water scorches matcha and makes it bitter.
  3. Whisk in a zigzag motion until smooth and frothy, about 15 seconds.
  4. Hot: steam 150 to 180ml oat milk to 140-150F (60-65C) and pour over the matcha.
  5. Iced: fill a glass with ice, add cold oat milk, then pour the matcha on top.
  6. Sweeten to taste with maple syrup or simple syrup.

Frequently Asked Questions

Is oat milk good in a matcha latte?

Yes. Oat milk is naturally creamy and mildly sweet, so it softens matcha's bitterness without covering its flavor. It is the milk we use for our matcha latte at Phinology.

Which oat milk is best for matcha?

Choose a barista-style oat milk. It has added fat and stabilizers that help it steam and foam well, and it resists separating in an iced drink.

Does oat milk curdle with matcha?

Not under normal conditions. Matcha is not acidic enough to split oat milk. If it looks grainy, the milk was likely too hot or old, so steam to about 140-150F (60-65C) and use fresh milk.

Is an oat milk matcha latte vegan?

Yes, as long as you sweeten with a plant-based sweetener such as maple syrup instead of honey. Check that your oat milk has no dairy additives.
