The Art of Vietnamese Phin Coffee

Vietnamese phin coffee is more than just a brewing method—it's a meditation, a ritual, and an art form that has been perfected over generations. Unlike the rushed espresso culture of the West, phin coffee asks you to slow down, be present, and savor every moment of the brewing process.

What is a Phin Filter?

The phin (pronounced "fin") is a simple yet elegant metal filter that sits atop your cup or glass. Typically made of stainless steel or aluminum, it consists of four parts: the chamber (where the coffee grounds go), a perforated insert that presses down on the grounds, a lid, and a base with small holes that allow the coffee to drip through slowly.

The Brewing Process

Step 1: Preparation

Start with 2-3 tablespoons of coarsely ground Vietnamese coffee. The grind should be coarser than espresso but finer than French press. Place the phin on top of your cup or glass.

Step 2: The Bloom

Pour a small amount of hot water (about 195-205°F) to wet the grounds—just enough to cover them. Wait 20-30 seconds. This "blooming" allows the coffee to release CO2 and prepares for optimal extraction.

Step 3: The Brew

Fill the chamber with hot water, place the lid on top, and wait. The coffee will drip slowly—ideally, you want 4-5 minutes for a full cup. This slow drip is what creates the rich, concentrated flavor.

Step 4: Enjoy

Once all the water has dripped through, remove the phin. You can drink it black (cà phê đen), with condensed milk (cà phê sữa), hot, or over ice.
