Mastering the Perfect Brew Time

When it comes to phin coffee, timing is everything. Too fast, and you'll get weak, under-extracted coffee. Too slow, and you risk over-extraction and bitterness. Finding that sweet spot is the key to unlocking the perfect cup.

The Science of Extraction

Coffee extraction is the process of dissolving soluble compounds from the coffee grounds into water. With phin coffee, we're aiming for a drip rate of about 1-2 drops per second, which translates to roughly 4-6 minutes for a full brew. This slow extraction allows for maximum flavor development while maintaining balance.

Factors That Affect Brew Time

Grind Size

The coarser the grind, the faster the water flows through. Vietnamese coffee should be ground slightly coarser than espresso but finer than drip coffee. Think somewhere between table salt and sand.

Water Temperature

The ideal range is 195-205°F (90-96°C). Water that's too hot will over-extract, creating bitterness. Water that's too cool won't extract enough flavor.

Coffee Amount

Using 2-3 tablespoons (15-20g) of coffee is standard for a single serving. More coffee will slow down the drip; less will speed it up.

Tamp Pressure

When you place the perforated insert on top of the grounds, press down gently. Too much pressure will slow the flow to a crawl; too little will make it too fast.

The Perfect Timeline

  • 0:00 - Add grounds to phin, level them out
  • 0:30 - Pour bloom water (20-30ml), wait for absorption
  • 1:00 - Fill chamber with water, place lid on
  • 1:30 - First drops should start appearing
  • 5:00 - Brewing should be complete

Pro Tip:

If your brew is too fast (under 3 minutes), use a finer grind or pack the grounds more firmly. If it's too slow (over 7 minutes), use a coarser grind or ease up on the tamping pressure.
